Tempeh Salad

Yields 4 servings

SALAD
1 tbs olive oil
2 tbs tamari
1 tbs cider vinegar
2 garlic cloves, chopped
1 block tempeh, cubed
1 cup spiral pasta
1/4 cup red onion, sliced
1/4 cup celery, sliced diagonally
1/2 cup red bell pepper, sliced into thin strips
1/2 cup green bell pepper, diced
1 tbs chopped parsley
DRESSING
2 tbs olive oil
1 tbs cider vinegar
1/8 tsp oregano
1 garlic clove, crushed
1 tbs tamari

SALAD: Mix together the first four ingredients. Add tempeh, marinating for at least for 1 hour.
Heat olive oil and half the tamari in skillet. Add tempeh, frying till crispy and brown on the outside. Cook pasta until al dente. Toss with remaining ingredients, temeph and set aside.
DRESSING: Whisk together ingredients and chill. Add to the tempeh and vegetable mix. Toss and serve.
