Basic Miso Soup

Serves 2

+ 4 cups water
+ 2 3-inch pieces of wakame
+ 1/2 small onion, thinly sliced
+ 1/2 carrot, slivered
+ 2 Tbls. miso dissolved in 2 Tbls. water
+ 2 green onions, chopped fine
+ 1 thin slice of fresh ginger
+ 2 tbs tofu cubed small
+ 2 tbs mung bean sprouts

Rinse wakame, cover with warm water and soak 5 minutes. Remove rib, and dice. Meanwhile bring 4 cups of water to a boil, add onions, ginger, carrot and wakame simmering 10 to 15 minutes. Vegetables should not be mushie, but slightly crisp. Remove from heat, remove ginger and dissolved miso, do not boil miso. To each bowl add tofu, mung beans, miso soup and garnish with green onions.
