Green Goddess Salad

1/4 cup cottage cheese
4 Tbs. buttermilk
2 Tbs. fresh parsley, stems removed
1/8 tsp. sea salt
1-1/2 tsp. apple cider vinegar
1/8 tsp. hot red pepper sauce (optional or use less, depending on taste)
1 clove garlic, minced
1 lb. salad greens, variety, chopped or torn small*
2 tbs choice of nuts or seeds, quickly ground in a coffee grinder
*kale, dandelion, cilantro, parsley, cabbage, spinach, green onion, mustard greens, and so forth - chose one or mix

Combine all ingredients, except lettuce and seed / nuts, in a blender. Process mixture until smooth. Place lettuce in a salad bowl with dressing and toss and serve with seeds / nuts on top.
To add additional protein, use some marinated seitan, deep fried tofu, or bbq marinated and baked tofu. Be creative.
