Garlic Soup

Yields 4 Servings

2 cup Water
1 cup Peeled garlic cloves
1 cup Chopped peeled potatoes
1 cup Chopped carrots
Salt and pepper to taste
Whipping cream; optinal (this could also be made from nuts like cashew, see recipe list)

Boil water, garlic, potatoes and carrots. Cover, reduce heat and simmer until vegetables are tender, about 20-25 minutes. Puree. Season. Reheat, if needed. Drizzle with cream, if desired.
