Cabbage Leaf Food Wrap

sweetheart cabbage, it grows to a point rather than a big ball
tomatoes
mushroom
broccoli
parsley or cilantro or mint, chopped fine
walnuts, coarsely chopped
egg-free garlic mayonnaise, mix finely minced garlic into mayonnaise

Peel leaves off carefully giving you ideal receptacles for a food wrap. Dice tomatoes, mushroom, and broccoli into a bowl and add parsley, cilantro or mint. Toss well. Take a good spoonful, place onto the cabbage leaf. Add bits of walnuts, and garnish with egg-free garlic mayonnaise. Fold over the end of the leaf, tuck in sides and roll up the rest of the leaf, like a burrito. Continue making as many as needed.

Alternatively, place in a serving dish in the fridge after garnishing with more parsley, cilantro or mint, to eat a little later. You could also vary the types of tomatoes used, mushrooms, or other vegetables. If vegetables end up being bulky, like cauliflower, run them through a blender, to create a spread to fill the leaf. Also, try varying the nut(s) or seed(s) used. Experiment with varying flavors and textures and don't forget to try sea vegetables (known by most as sea weed).
