Millet Fruit Balls

2 cups cooked millet
1/4 cup chopped almonds
1/4 cup chopped sunflower seeds
1/2 cup chopped raisins
1/2 cup chopped apricots
1/2 cup chopped apples
1 Tbs frozen orange juice

Combine all ingredients, other than the grain and make it into a paste, it does not have to be smooth, a little chunky is fine. Take some grain, form into a patty, push thumb into center to form a small well, put some of the fruit paste into it and form grain around it and roll into a ball.

Options:
If you don't want to take the time to cook millet, use yesterday's cooked grain: brown rice, millet, barley, etc.
Have some sesame seeds of varying color and roll the ball to coat with sesame seeds. It doesn't have to be perfect.
You could also combine 50 / 50 of dried cilantro and parsley and add to the grain to increase nutritional value and add flavor. For a bit more flavor, add a small amount of mint to the mix.
For additional nutritional value, grind flax seeds before combining with the fruit paste. These will add Omega-3 oils, an Essential Fatty Acid.
