Sweet and Nutty Lentils

Serves 4

1 Cup Red lentils
2/3 Cup Water
1 1/4 Cups Apple cider
1 Med Sweet red apple, washed, seeded, and cut into 1-inch cubes
1 sm Yellow onion, chopped
1/4 Cup Chopped walnuts
1/2 tsp Ground cumin
3 Whole cloves
1/4 tsp Sea Salt
1/2 tsp Ground cinnamon
Zest of one orange

Rinse and drain lentils. Pour water and cider into medium saucepan, begin heating to a boil, mix in remaining ingredients. Reduce heat and simmer for 15-25 minutes, until liquid is absorbed and lentils are tender. Remove whole cloves, and serve warm as side dish, over brown rice or as filling for tacos.

To make a sauce: make a small amount of traditional rue, adding Apple Cider vinegar, ground walnuts, cumin, pinch sea salt, cardomum powder, and cinnamon. Adjust falor. Whisk together and thin as needed and pour over lentils and rice dish.
