Seaweed Salad

Serves 2-4 people

Salad:

1/2 cup dulse fronds (soaked for 2 hrs to rehydrate)
1 cup nori fronds
1/2 cup wakame
3 carrots, shredded
4 tbs sesame seeds
1/2 cup shredded cabbage

Mix all ingredients until well combined.

Dressing:

2 tsp lemon rind, grated
1 lemon, juiced
4 dates, chopped
3 tbs sesame seed oil or olive oil
2 tsp ginger
Sea Salt to taste

Blend everything until smooth. Pour dressing over salad and let the salad sit for 30 minutes at room temperture to blend flavors. Toss before serving on shredded spinach leaves and garnish with edible flowers (optional).
