Asian Noodle Salad

Serves 6
This is healthy "fast food." Tossed noodles with raw vegetables and a sesame oil sauce. A light and satisfying salad perfect for a quick lunch.

1/2 lb uncooked fettuccini or any flat noodles
1/4 cup brown rice vinegar
1/4 cup apple cider vinegar
4 Tbs toasted sesame oil
2 Tbs raw sugar or granulated fructose
3/4 tsp sea salt
1/8 tsp black pepper
1 tsp poppy seeds
1 to 2 Tbs slivered almonds or raw sunflower or pumpkin seeds
2 cups green cabbage, shredded
1 tomato, cubed
Carrot slivers
2 Tbs fresh chives, chopped
2 green onions, finely sliced

Cook noodles according directions until done, drain well and set aside.
In a small bowl combine the green onion, poppy seeds, chives, vinegars, oil, sugar, salt, and pepper.
In a large bowl mix the vegetables and noodles together. Poor vinegar over the top and toss to combine. Serve immediately or chill until later, but don't forget to toss once more before serving.
