Vegetarian GravyMakes About 4 1/2 CupsA good all-purpose vegtarian gravy recipe. Serve it over mashed potato or stuffing, or whatever else your imagination conjures up.
Melt butter in a heavy skillet, sauteé onion and garlic, about 2 minutes. Add flour, stirring constantly until flour turns brown. Add water or stock and soy sauce, whisking constantly until mixture comes to a boil and thickens, about 5 minutes. Add parsley. Cook for one minute more. If gravy becomes too thick, thin with additional water or stock.
