Easy Fragrant Rice

2 cups vegetable stock
1 cup long grain white rice
1 clove garlic, minced
3 Tbs fresh parsley, minced
2 tsp lemon peel, grated
1 Lemon juiced
1 tsp Ghee
good pinch sea salt

Bring stock to a boil in a saucepan over high heat. Stir in salt, garlic, lemon juice and rice reduce heat immediately to low. Cover pan and simmer 20 to 30 minutes, until rice is tender and liquid has been absorbed. Remove from heat and let stand 5 minutes, covered. Add remaining ingredients and fluff with a fork before serving.
