Aloo Masala

1 Lb Potato
1 cup Whole Coriander
1 cup Cumin seeds
15 to 20 Whole red chillies
1/2 cup Tamarind (as per taste)
3 tbsp Vegetable oil
Sea Salt to taste
For Garnish:
Finely chopped Green Chillies
Finely chopped Coriander leaves

Boil potatoes. Peel and cut each potato into 4 to 6 pieces. Keep aside. Roast coarriander, red chillies and cummin seed slightly in a gridle before grinding in a little water into a thick paste. Soak tamarind in little water. Heat oil in the pan and add ground spices, add salt and stir for a while. Add cut potatoes and continute stirring. Add tamarind water and put on low heat for a while, until thicked. Serve over Basmati, Jasmine or Brown Rice.
