Onion Zucchini Bread

Yield: 1 Round Loaf, 6 to 8 servings.
Ingredients:

3 cups whole wheat Flour
3/4 cups Chopped onion
1/2 cups Grated Parmesan; divided
5 tsp Baking powder (non-aluminum)
1 tsp Sea Salt
1 cups Buttermilk
1/3 cups Oil
2 Eggs; lightly beaten
3/4 cups Finely shredded zucchini

Grease a 9" round baking pan. Combine dry ingredients; using 6 tablespoons Parmesan cheese. Combine wet ingredients; blend with flour mixture. Heat oven to 350 degrees F. Transfer dough to prepared pan; sprinkle with remaining Parmesan cheese. Bake 40 minutes.
