Spiced Rhubarb Bread

Yield: 2 Loaves
Ingredients:

1 1/2 cup Packed brown sugar
2/3 cup Oil
1 Egg
1 cup Buttermilk
1 tsp Vanilla
1 tsp Baking soda
2 1/2 cup Flour
1 tsp Salt
1 tsp Cinnamon
1 1/2 cup Diced rhubarb
1/2 cup Chopped nuts; optional
TOPPING:
1/2 cup Sugar
1 tbs Butter; melted
1 tsp Cinnamon

Grease and flour 2 loaf pans. Beat brown sugar, oil and egg. Stir in buttermilk, vanilla and baking soda; mix well. Mix flour, salt and cinnamon; mix into wet ingredients. Fold in rhubarb and nuts, if using. Heat oven to 350 degrees F. Pour into pans. Combine topping ingredients; sprinkle over top of loaves. Bake until bread tests done, about an hour.
