Millet Tabouli

From: RAVI NAM K (not sure if this is correct)
Here is a tabouli recipe I like to eat. Although millet is not commonly used in tabouli, it is an easily digested grain that tastes good.

1/2 cup Millet, cook until soft, set aside to cool
1 - 2 bunches of parsley
2 bunches small scallions
a handful of mint leaves
2 tomatoes
juice of one lemon
2 - 3 Tbsp. extra virgin olive oil
pinch ginger
salt to taste

Wash and chop fine all vegetables removing any stems. Stir all ingredients together. Chill before serving. Simple and healthy side.
