Potato Griddle Scones

1 1/2 cups Whole Wheat Flour
1/2 tsp Salt
3 tsp Baking powder
2 tbs Olive Oil, Ghee or other healthy oil
1 Egg, beaten, with milk
1 cup Nut Milk (of choice); about
3/4 cup Cold mashed potatoes

Sift flour, salt and baking powder together. Work in the oil lightly, add potatoes, egg and milk, mix to a soft dough. Roll out about 3/4 inch thick, cut into triangle cakes and cook in a hot, well greased griddle or cast iron pan.

Depending on the size of the triangles, you could make enough for two people or if you need more, increase the amount you make as needed. They will keep for several days and can be reheated before serving.

Variations: For different flavors try adding herbs: fennel, cumin, rosemary, etc., or serve with homemade fruit jam. Try using flavored mashed potatoes from last nights dinner, like garlic or herbed and it wont hurt to once in a while use some butter. All good.
