Breaded Tofu Squares
Marinate tofu in any way you like overnight, after draining it well. Combine breadcrumbs, salt and pepper to taste in a bowl. Add any herbs: powdered garlic, parsley, oregano, thyme, rosemary, etc. Combine milk and egg in a bowl and beating lightly. Dip tofu in milk mixture and coat with breadcrumbs thoroughly. Heat oil in a skillet over medium heat. Sauté tofu 5-7 minutes per side, until browned. You can do away with the egg if you would like to and use a nut or rice milk by itself. Another way you can do this is to make a very thick batter that the tofu is dipped into and then deep fried, sort of like a corn dog batter.
