(P) Perennial- (TP) Tender Perennial- (A) Annual- (B) Biannual - "Salvia officinalus" - Medicinal and culinary- All sages are members of the Salvia family. They are mostly known for their culinary uses, but some are considered to be strictly medicinal. Others are grown to attract hummingbirds and bees. ~ Berggarten ~ "Salvia officinalus "BERGGARTEN" (P) - Culinary- Large round gray/green leaves with a very spicy scent. 10" ~ Sage ~ "Salvia officinalus" (P) - Culinary and Medicinal- Woody square stems with hairy leaves and blue flowers. The leaves have a strong taste that increases as it dries. 18" ~ Clary ~ "Salvia scleria" (B) - Medicinal- Large pungent leaves with tall flower spikes. The essential is used in Aromatherapy as a relaxant for stress, fatigue, asthma, digestive and female problems. 3' ~ Golden ~ "Salvia officinalus "AUREAU" - (TP) - Culinary and Medicinal- Short compact growth habit with yellow and green leaves. 18" ~ Pineapple ~ "Salvia elegans" - (TP) - Culinary and Medicinal- Smells just like fresh pineapple. Bright scarlet flowers in the fall. Used as a flavoring on pork, poultry, fish and cheese. 3' ~ Honeydew ~ "Salvia elegans, Var." - (TP) - Culinary and Medicinal- Honey- dew scented, heart shaped leaves with tubular red flowers. 3' ~ Purple ~ "Salvia officinalus " Purpurea" - (TP) - Short compact Sage with purple/red leaves. 18' ~ Scarlet - "Salvia coccinea" - (A) - Ornamental- Beautiful red flowers that attract hummingbirds and bees. 3' ~ Tri-color ~ "Salvia officinalus "TRI-COLOR" - (P) - Culinary and SANTOLINA - (TP) - "Santolina ericoides" -- Medicinal- Santolina is also known as Lavender Cotton. The feathery green foliage smells like the medicine "Champho-Phenic". The flowers are either cream colored or yellow and appear in the late summer. Santolina is traditionally used in English Knot Gardens. It is a medieval remedy for killing intestinal worms, cleansing the kidneys and jaundice. 1' Sage General Description Sage is an herb from an evergreen shrub, Salvia officinalis, in the mint family. Its long, grayish green leaves take on a velvety, cotton like texture when rubbed (meaning ground lightly and passed through a coarse sieve). Geographical Sources Sage is grown in the United States. It also is grown in Dalmatia and Albania. Traditional Ethnic Uses Sage enhances pork, lamb, meats, and sausages. Chopped leaves flavor salads, pickles, and cheese. It is one of the most popular herbs in the United States. Taste and Aroma Sage has a fragrant aroma and an astringent but warm flavor. History/Region of Origin The name "Sage" comes from the Latin word "salia," meaning "to save." Greeks and Romans used it to cure snake bites and to invigorate the mind and body. In the Middle Ages, people drank Sage in tea and used Sage to treat colds, fevers, liver trouble, and epilepsy. Although Sage is no longer used medicinally, it has become one of the world's most popular herbs.
