The book covers a variety of grains from old traditional grains like barley, buckwheat, millet, oats, and rye. It includes native wild rice and amaranth, and less commonly known grains like Quinoa, Kamut, Spelt, Teff, and Tritical. Commonly used grains, wheat, corn and rice, are also included in the collection of recipes of classic dishes like New England Blueberry Pancakes or inspired recipes like Mushroom Risotto, Amaranth Date Muffins and Millet-Stuffed Roasted Onions from our melting pot of ethnic diversity that makes us the U.S. As the first sentence from the book says: "Grains' basic flavors and muted colors make them the ideal canvas, waiting for you to layer on the flavors and colors to produce a culinary masterpiece." What more can be said but, this is a good companion in anyones kitchen.
